Urns will soon be vessels for lush, green plants, the birds will head back home, and the crocus will peek through what’s left of the snow: it’s spring! While the outside is waking up from a long winter, we have exciting new offerings inside as well. Our chef is offering regionally-themed dinners the first Friday of the month, all open to the public. Showcasing her award-winning organic style, Maggie Wescott’s culinary creativity is remarkable. Reserve a seat while they last; you’ll get to say you knew her when.  She’s going places!

Learn to make pasta, the secret to cooking with good old cast iron, put together a beautiful, satisfying salad that pleases any dietary request or understand the basics of a Mediterranean diet: we’ve got you covered. The classes are limited to 6 participants to maximize learning, but if they’re full you can pull together a few friends and we’ll customize a class just for you. It’s so much fun to cook with work teams, book clubs or neighbors.

COOKING CLASSES

All classes feature hands-on instruction, plentiful food and wine samplings and take home recipes of the menus from the day. All dietary restrictions are welcome with advanced notice. Classes begin at noon, and generally run 3 hours. Class size is limited to 6 participants, and fill quickly. Cast Iron 101 - Taught by Chef Collin Sandoe of the Herbivorous Butcher • Saturday, March 31 - This is not your grandmother's cast iron cooking class.  Or maybe it is!  And maybe that's a good thing!  Bring your own hardware to this class as we take you through the motions of what makes cast iron such a dynamic, powerful and timeless format for baking, searing and stewing.  On the menu will be baked bread, an egg dish and something you've never thought of doing in cast iron.   (Note: a small selection of cast iron cookware will be available to purchase in-class.)

Handmade Pasta • Saturday, April 7 & 21 - Roll up your sleeves and learn how easy it is to make pasta from scratch! Create three dishes using fresh pasta dough: Classic Fettuccine AlfredoSweet Potato Ravioli with Brown Butter Sage Sauce, and Stuffed Manicotti. As a bonus, you'll learn to make ricotta from scratch.

Mediterranean Feast • Saturday, May 5 & 19 - Learn the basics of the Mediterranean diet and how to implement changes to get cooking fresh and healthy all year round. We’ll cook a 4-course Mediterranean feast in this hands-on class.

Summer Salads • Saturday, June 2 & 16 - Learn to use the freshest produce of the season to make salads to get you eating healthy and delicious all summer long! On the menu: Shaved Asparagus with Parmesan and Lemon, Niçoise Salad, Chicken and Grape Pasta Salad, and Berry Salad with Basil and Pepper.

WHAT’S NEW AT THE INN

We’ve been busy this winter: restoring, polishing, creating culinary opportunities that are healthy and interesting, and arranging spaces to make the inn more accessible and comfortable for you, our valued guests.

Dinner is served. Beginning Friday, April 6 (and every first Friday thereafter) please join us for a culinary tour around the world, and it all begins in France. Organic pea bisque with white truffle oil & parmesan tuile? "C'est magnifique !” Four-course dinner includes wine or non-alcoholic pairings. A beautiful, historic conference space for your book club, or board meeting? The inn has recently renovated our carriage house meeting space with the latest technology and the most comfortable seating; we’d love to help you plan your next event. We’ll see to every detail. Comfortably accommodates 18.

Available mid-April, the Arthur Conan Doyle Grand Suite has been in the works for years (as all great works must be). We’re putting the finishing touches on this latest addition to our lineup of literary-themed suites. Updates include a luxurious steam shower, private patio, large vintage map of London, shelves of old books (many by Doyle), interesting relics and historic stained glass. Sherlock Holmes may just have been inspired by surroundings as detailed and beautiful as this. UPCOMING EVENTS IN STILLWATER

Stillwater has some impressive goings-on to look forward to. The St. Croix River Bridge has invigorated Main Street; there are new restaurants and fun happenings this season.  

Bricks and Bourbon has gained some well-deserved attention, the always popular Lolo has added a 2nd floor to their Main Street location, and the Oasis Cafe is serving fantastic craft cocktails next to their renovated signature cafe. The Stillwater Escape Co. is the area’s first escape room and is located right above The Velveteen, Stillwater’s first speakeasy experience. Domacin continues to wow guests with their selection of fine wines and New American cuisine, and Marx Fusion Bistro has been serving eclectic new American fare for over 12 years in the St. Croix Valley.
